How do you fight a traffic ticket (after the court date)?

Let’s say you got a speeding ticket, and went to court and was ordered to go to Traffic School (but not have the points on your record). Could you appeal the judges decision if you really felt it was still unfair (especially if traffic school plus administrative fees are more than what the original speeding ticket plus court costs would have cost)? How can you write to if you think traffic citation laws and procedures are unfair? How do you fight the injustice of “speed traps” and other traffic-related infractions that are more concerned with fiscal solvency than highway safety?
